If there’s any Filipino dish you should know, it’s Adobo. There are different versions for this dish depending on where you live or grew up in the Philippines. This version I’m sharing with you is my mom’s and it is the best adobo there is (for me at least).
What you’ll need:
- 1kg pork cubes
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 4 cloves of garlic (or more if you prefer)
- 1/2 onion
- 2pcs bay leaf
- 1/2 tsp pepper
- 2 tbsp oil
- 2 cups of water
What you’ll do:
1 – Heat oil in pan and saute the garlic and onion
2 – Add in the pork and let it turn brown
3 – Add in the soy sauce, vinegar & water
4 – Let boil and simmer until pork is tender
5 – Add in bay leaf and pepper
In my case, I added in a little too much water in the beginning. I had to add soy sauce and vinegar countless times. I suggest to go add small amounts of water first. The one I cooked had too much water and looked like stew. It still tasted awesome though. 😛

PS. You can actually replace pork with chicken or have both pork and chicken for this recipe.
